Chocolate Marzipan Bars

I have been a fan of marzipan for a long time. Actually, marzipan and chocolate are one of my favorite combinations. And did you know that marzipan can be easily made at home? If you are like me and you like marzipan, this recipe is for you.

These bars are:

  • white-sugar-free;

  • gluten-free;

  • dairy-free;

  • no-bake.

Recently, I discovered an amazing Lindt bar with marzipan and I could not help but recreate it myself. I was surprised by how easy it was to prepare it at home. One would need only a few ingredients. Not only are these bars fast to make, but they are also good for you. They contain no sugar and given the significant quantity of almonds in them, they can be considered as protein-packed bars. The recipe follows.

Ingredients:

  • 200 g almond flour

  • 60 g honey (or maple syrup)

  • 3 tbsp cacao butter

  • [optional] 1 tbsp powdered coconut milk

  • 1 tsp vanilla powder or extract

  • 200 g dark chocolate

Preparation:

  1. Melt the cacao butter.

  2. In a bowl add all the ingredients (without the chocolate) and mix well. The consistency should be sticky. If the mixture feels dry, add more melted cacao butter.

  3. Press the marzipan in your fingers to form the bars.

  4. Refrigerate the bars up until you melt the dark chocolate.*

  5. Cover the marzipan bars in melted chocolate. Let the chocolate set at room temperature or in the fridge before starting to enjoy the bars.

Serves about 10-15 bars (depending on their size, the number can vary).

Tip:

* The chocolate should be melted over a double boiler. You can then temper it to achieve a glossy chocolate cover.
