Cinnamon Honey Cookies with Pear Jam

The perfect autumn cookies are here! They will bring the incredible smell of cinnamon and pears into your home. Soft and delicate, these cookies are an amazing treat for the colder days ahead.

Ingredients:

For the cookies:

For the filling:

  • 4 medium pears

  • a squeeze of lemon

  • 1 tbsp honey

  • 1 tsp cinnamon

Preparation:

  1. Prepare the honey cookie dough following this recipe.

  2. To prepare the pear jam, peel the pears, remove their seeds, and cut them into small pieces.

  3. Add the pears to a pot on the stove at medium heat. Add the lemon juice and the cinnamon. Stir well.

  4. Once the pears start to soften up (in about 5-7 minutes), add the honey.

  5. Let the jam simmer for 20-30 minutes. Stir occasionally while mashing the pear pieces.*

  6. Once the pears are well mashed and caramelized, remove them from the stove and allow for the jam to cool down.

  7. Sandwich the honey cookies with the pear jam.** Enjoy with a cup of tea or hot chocolate!

The recipe makes around 10-12 sandwiched cookies.

Tips:

* If the pears start to stick to the pot, add water, one tablespoon at a time, to prevent further sticking.

** The cookies are initially soft, but they soften over time after being sandwiched.
