Delicious Chocolate Clementine Cookies

Impressive in their simplicity vegan cookies, sandwiched together with tasty clementine jelly and chocolate ganache.

These cookies combine the delicate flavor of the clementines with the richness of the dark chocolate. I already prepared these cookies twice in one week and they never lasted for more than two days. This is a testament to their deliciousness. Not only are they extremely satisfying but they are also made with wholesome nutritious ingredients and are vegan. The cookies may look fancy but I assure you they are easy to prepare.


These cookies call for clementine jelly which I like to prepare from scratch. The full instructions on how to prepare it at home are described later in this blog post. Grab the ripest and most delicious clementines on the market and let us get started.



 

Ingredients

  • 120 g almond flour

  • 40 g coconut flour

  • 60 g coconut sugar

  • 45 g coconut oil (soft, at room temperature)

  • 1 tbsp chia seeds

  • 3-4 tbsp water

  • 1 tsp vanilla

  • 1/2 tsp baking powder

  • a pinch of salt

  • 4 clementines

  • 60 g maple syrup

  • 2/5 tsp agar-agar

  • 100 g coconut milk

  • 100 g dark chocolate

  • 2-3 drops clementine (orange) essential oil


Step 1: Cookies


Mix the chia seed with the water and leave them aside for 5 minutes for the chia to absorb the water.


In a bowl, add the two types of flour, sugar, vanilla, baking powder, and salt. Mix well.


Then, add the coconut oil and the chia seeds and mix to obtain the cookie dough. Try not to overmix. Next, roll out the dough to 1-2 cm thickness and cut out round-shaped cookies.


Bake at 170 degrees for 10 minutes.


Step 2: Clementine Jelly

Extract the clementine juice and add it to a pot. Combine it with the maple syrup and the agar-agar. Bring the mixture to a boil, let it boil for one minute while stirring, and then remove it from the heat.


Pour the mixture into a container, refrigerate, and let it jellify.


Step 3: Chocolate ganache


Heat the coconut milk without allowing it to boil. Pour the heated milk over the chocolate that has been broken into pieces. After 2 minutes, start stirring and do so until you reach a smooth consistency. Let the ganache cool down for several minutes.


Once the jelly is completely set, spread the ganache evenly on top of it and return to the fridge.


Step 4: Assembling

When the filling sets, the cookies are ready to assemble. Cut out a round form from the filling, place it on top of a cookie, and sandwich it with another cookie. Repeat the process for all cookies.
