Healthy Vegan White Chocolate
Here is a recipe I believe many of you would appreciate - homemade vegan white chocolate without added refined sugars! This recipe contains a key ingredient, specific to many vegan desserts - cashews. It makes the chocolate creamy and it helps to create the solid texture of the white chocolate without the need to add powdered milk.

As you may already know if you have tried to prepare white chocolate from scratch, its preparation requires powdered milk and lots of powdered sugar. These two ingredients are essential to obtain the specific creamy texture of the white chocolate. To avoid using refined sugars and to make the chocolate vegan, instead I add a magic ingredient - cashew butter! The latter helps to stabilize the cacao butter and works perfectly for the re-creation of the white chocolate texture.

Ingredients:
90 g cacao butter
60 g cashew butter *
50 g maple syrup **
1 tsp vanilla (extract or powder)
Preparation:
Melt the cacao butter over a double boiler. Let it cool down slightly before using.
Add the rest of the ingredients*** to the melted cacao butter and blend everything together (using either a stand mixer or a blender)
Pour the mixture in your favorite chocolate molds and refrigerate until it sets.
Remove from the molds and enjoy it with your afternoon coffee/tea or in cakes and desserts! Let me know if you try this recipe out and share it if you like it!
Tips:
* In case you cannot find cashew butter in your grocery shop, think about preparing it at home by processing roasted cashews in a food processor.
** Optionally, you can replace the maple syrup with honey.
*** The ingredients should be at room temperature to prevent the cacao butter from solidifying.
