Homemade Chocolate Bonbons Filled with Strawberry Coconut Mousse

Title says it all - I am revealing my homemade chocolate recipe! It is an easy and wholesome way to prepare dark chocolate with a pronounced cacao flavor!

Everybody loves chocolate! Unfortunately, the chocolate we buy in stored nowadays often contains too much refined sugar and harmful oils, such as palm oil. To ensure the wholesomeness of your chocolate intake, you should prepare it yourself. Not only are you that way able to control the ingredients that go into the chocolate, but you will also create a truly rich cacao flavor.

If you fancy a chocolate bite, you can prepare the mixture for my homemade chocolate, place it in a mold and chill it. You can enjoy it as it is or sprinkle your favorite nuts on top for extra flavor. In this post, I will show you how to use the homemade chocolate mixture to prepare chocolate bonbons filled with vegan strawberry-coconut mousse.


Ingredients:


For the homemade chocolate:

  • 125 g cacao butter

  • 3/4 cup raw cacao powder

  • 4 tbsp maple syrup

For the mousse:

  • 125 g fresh strawberries

  • 2.5-3 tbsp coconut butter

  • [optional] 1 tsp maple syrup


Preparation:


For the homemade chocolate:

  1. Using a double boiler, melt the cacao butter.

  2. To the melted cacao butter, add the sifted cacao powder. Mix until well incorporated.

  3. Finally, add the maple syrup and mix well until all three ingredients are well combined together.

  4. To consume it as it is, pour the mixture into a mold/tin lined with parchment paper and freeze it until the chocolate sets. Otherwise, if you want to prepare homemade chocolate bonbons, do not freeze the chocolate mixture but proceed with the instructions.

For the mousse:

  1. Melt the coconut butter using the bain marie method.

  2. Puree the strawberries using a blender or a mixer.

  3. Stir the pureed strawberries into the melted coconut butter and mix until well incorporated.

  4. You can optionally add maple syrup for extra sweetness.

Assembling the chocolate bonbons:

  1. Pour a bit of the homemade chocolate into molds for bonbons and cover the sides of the molds. Chill the poured chocolate.

  2. Add some strawberry-coconut mousse in each mold and make sure you leave some place to cover with chocolate. Chill again.

  3. Finally, pour more chocolate on top of the mousse to "seal" the bonbons and chill until the chocolate firms up.

  4. Take the chocolate bonbons out of the molds and enjoy!


Serves 40-45 bonbons.
