No-Bake Vegan Caramel Bars

Vegan bars that are so decadent and tasty! They require no baking and can be prepared in no time! These caramel bars contain only wholesome ingredients and natural sweeteners.

The caramel bars consist of three layers: a crust, a homemade caramel layer and a chocolate cover. The sweetness of the caramel combines pleasantly with the bitterness of the chocolate. Moreover, the bars offer a variety of textures - from the chewiness of the crust, to the softness and the creaminess of the caramel, to the crunchiness of the chocolate.

Ingredients:
For the crust:
50 g almond flour
50 g oat flour
2 tbsp homemade caramel
For the homemade caramel:
15 Medjool dates
75 g mixture of almond butter and hazelnut butter (almond : hazelnut = 2 : 1)
a pinch of salt
For the chocolate layer:
50 g homemade chocolate
1 tbsp coconut oil
or
50 g dark chocolate (85% or more cacao solids)
1 tbsp coconut oil
For the topping:
goji berries
pistachios
Preparation:
For the homemade caramel:
Soak the dates in warm water. After half an hour, drain the dates of all the water and put them in a food processor.
Add the nut butter and the salt, and process until everything is well combined. This simple two-step method gives a delicious way to prepare homemade caramel.
For the crust:
Save approximately 2 tbsp of the homemade caramel for the crust.
Combine the almond flour, the oat flour and the 2 tbsp of caramel. Mix well (using a food processor) and the crust is ready!
Assembling the bars:
First, in a rectangular tin put the crust and flatten it. Place it in the fridge to cool it down for several minutes.
Next, put the caramel layer on top of the crust and spread it well. Place the bars back in the fridge and keep them there until you melt the chocolate and the coconut oil.
Finally, pour the warm melted chocolate on top of the caramel layer, spread it well and sprinkle with goji berries and pistachios.
Allow the chocolate to set before cutting the dessert into rectangular bars.
Serves 8 caramel bars.
