Peanut Butter and Chocolate Chips Cookies
Today's recipe is for all of you, peanut butter lovers. Soft on the inside and crunchy on the outside, these cookies are a must-try. Not to mention the wonderful combination of roasted peanuts and dark chocolate.

The cookies:
are vegan
contain wholesome ingredients
are made with just a few main ingredients
The title says it all, who would resist peanut butter cookies with whole pieces of chocolate inside that are also extremely easy and fast to make. Let us jump straight to the recipe.

Ingredients:
85 g peanut butter
15 g vegan butter (soft)*
50 g coconut sugar
85 g spelt flour
3 tbsp maple syrup
a pinch of salt
60 g chocolate chips**

Preparation:
Preheat the oven to 180 degrees C.
Combine the peanut butter, vegan butter, and sugar together and mix well using a mixer.
Add the maple syrup and continue mixing for a while.
Mix in the spelt flour to obtain a homogeneous dough-like consistency.
Finally, fold in the chocolate chips using a spatula.
Scoop up dough balls and place them on a silicone mat/baking paper.
Press down the cookies with your fingers. They will expand more while baking.
Bake for 12-13 minutes. Then let them cool completely and they are ready for a taste test.

* You can replace it with coconut oil. ** Dark chocolate, I used chocolate chips with 80% cacao solids.
