Peanut Butter Cinnamon Cookies
Do you want an easy recipe for vegan peanut butter cookies? You have come to the right place! These cookies contain very few ingredients and are super satisfying! In addition to being vegan, they are also gluten-free and free of refined sugar!

Peanut butter and cinnamon may seem like a strange combination at first, but believe me, the two go extremely well together! Cinnamon not only adds flavor but also increases the sweetness of the cookies which helps to reduce the amount of sweetener used in the recipe!

Ingredients:
100 g peanut butter*
20 g maple syrup**
1 tsp cinnamon
25 g coconut flour
a pinch of salt
50 g dark chocolate (for covering)
Preparation:
Mix the first 5 ingredients together to create a dough. ***
Roll out the dough to approximately half a centimeter thickness.
Cut cookie shapes out of the dough and place them on a parchment paper.
Bake for 6 to 8 minutes at 180 degrees C. The cookies can burn easily, so I would recommend you watch them closely while baking and remove them from the oven once they start to get slightly golden.
When out of the oven, allow the cookies to cool down completely.
In the meantime, melt the chocolate over a double boiler.
Finally, cover the cookies with chocolate however you desire, wait for the chocolate to set and give them a taste test!
Serves 16 cookies.
Tips:
* I make my own peanut butter, no oils or sweeteners added. Crunchy peanut butter is always an option, just remember you may need less flour in that case.
** Optionally, you can replace the maple syrup with honey.
*** The dough should be slightly sticky, but its consistency depends on the peanut butter you use. In case it is too sticky, try adding a bit more coconut flour. Here, a bit is crucial, as the coconut flour is highly absorbent.
