Vegan French Macarons

French macarons...vegan style! For those of you who are on a plant-based diet and want to enjoy a little bit of this French classic. I assure you, they are just as good as the original macarons.

Here is are the ingredients for 1 batch of eggless shells:

  • 30 ml aquafaba

  • 40 g almond flour

  • 65 g icing sugar

  • 15 g sugar

The main difference with the original recipe is the replacement of the egg whites with aquafaba.


The preparation is detailed in my blog post Tips and Tricks for the Perfect French Macaron. There are two key differences between the preparation of the vegan macaron shells and that of the original recipe:

  • First, the aquafaba needs to be whisked longer to achieve stiff peaks. Whisking it longer will not compromise the form of the shell, unlike when whisking egg whites.

  • Second, the shells need to baked longer (approximately 20-25 minutes) at a lower temperature (130 degrees C).
