Vegan Peach Galette

In the season of peaches, here is a recipe that you should not miss. Sweet galette with delicate late-summer flavors that will take you no time to prepare.

The galette is vegan and it consists of:

  • a crunchy base

  • fruity filling

Let us take advantage of the beautiful peaches on the market during this time of year and make a simple yet delicious dessert with them. Sweet galettes are fast to prepare and they do not require any special skills. At the same time, one can easily turn this simple treat into an eye-catching dessert with little effort.


The galette that we will make today is a peach-and-blueberry galette. I arranged the peaches in an appealing rose pattern for presentation sake, but you can totally omit this part if you have no time or patience for it. The important part is to cut the peaches into thin slices (thinner if you go for the rose pattern). Then, you can arrange them over the crust in any way you fancy or simply distribute them following no particular order. Finish with a layer of blueberries or any other berries in season.


Crunchy vegan crust

An essential part of the galette is its crust. We will make a vegan crust using coconut oil, but you can replace it with vegan butter or simply butter. If you prepare the crust using coconut oil, make sure it is cold before using it. Please also note that the raw crust dough is softer than usual and can be slightly more difficult to work with. If the dough becomes too soft, place it in the fridge for 2-3 minutes to harden up a bit before continuing.

This galette is really irresistible. Despite being vegan, it is rich in taste, fresh, and mouth-watering. Check that for yourselves with the following recipe.


Ingredients:

Crust:

  • 120 g spelt flour

  • 60 g coconut oil*

  • 50 g coconut sugar

  • 1 tbsp cold water

  • a pinch of salt

Filling:

  • 4 peaches

  • blueberries or other berries

  • 30 g maple syrup**

  • 5 g cornstarch

  • a pinch of salt

Glaze:

  • maple syrup


Preparation:

Crust:

  1. Combine the dry ingredients in a bowl and mix well.

  2. Add the cold coconut oil and start rubbing it into the dry ingredients using your fingers until the mixture starts to resemble wet sand. The heat from your fingers will eventually soften the coconut oil so be careful to perform this step fast.

  3. Add the water and mix to form a ball of dough.

  4. If too soft, place the dough in the fridge for 2-3 minutes.

  5. Roll out the dough to about half a centimeter thickness.

Filling:

  1. Cut the peaches into thin slices.

  2. In a bowl, combine the peach slices, the blueberries, the cornstarch, the salt, and the maple syrup and leave aside for 5 minutes.

  3. Arrange the peach slices in the center of the rolled-out dough, finishing with a layer of blueberries.

  4. Fold the ends of the dough and glaze them with the juice from the peaches marinate.

  5. Bake in a preheated oven at 170 degrees C for 25 to 30 minutes.

  6. Finally, let the galette cool down and glaze it with maple syrup.
